I was recently given the challenge to Make a Weeknight Meal Special with Bertolli Meal Soups. The meal had to be prepared in less then one hour is the catch. I was not worried~as once I see how meaty the soup was I knew that we would just need a few sides to add to the meal. We choose the Tuscan~Style Beef & Vegetables as that sounded like that best one to us. And~It must be good as it was the last one at the store! What I loved about the Tuscan Soup was that is was first of all,so easy to make and second that it was loaded with veggies! As we love a big hearty~soup and Bertolli didn't disappoint! Made with Tender beef, mushrooms, yellow squash, zucchini, carrots and celery with bowtie pasta in a rich broth. It was so easy to make too~just add a cup of water to the soup in a pan and it is ready in just minutes. I loved all the veggies as the soup tasted like homemade without all the work! We had a side salad and rolls that I had in the freezer that I just put in the oven.
