Frito Lay recently asked me about a recipe that reminds me of home. I have been thinking of all the dishes and desserts that my parents used to make as both of them were good cooks. But the one that sticks out the most in my mind is my Mom's Banana Cream Pie.Everyone in the family requested it when we went anywhere~so I watched her many times. She just made the best crust that melted in your mouth.. I have enclosed the recipe and hope that you will also enjoy making it~but be warned this is very addicting!

Here is the recipe~
~Mom's Banana Cream Pie~
Crust
1 1/2 cups all-purpose flour plus flour for rolling
1/2 teaspoon salt
1/4 cup solid vegetable shortening, chilled
1/4 cup butter, chilled
4 to 8 tablespoons ice water
Combine the flour and salt in a food processor fitted with the metal blade. Add the shortening and butter and process using on/off pulses until the mixture is the size of peas. Add the water 1 tablespoon at a time, processing until the dough just begins to come together.
Form the dough into a ball. Flatten into a disk. Wrap in plastic and refrigerate until chilled, at least 1 hour.
Preheat the oven to 350 degrees F.
Remove the chilled dough from the refrigerator. Let soften slightly if necessary.
Roll out the dough on a lightly floured surface to a 10-inch round, about 1/8-inch thick.
Transfer the dough to a 9-inch pie dish. Crimp the edges decoratively. Bake until the edges of the crust are lightly browned, about 10 to 15 minutes. Transfer to a rack. Let cool completely.

2/3 c. sugar

2-3 bananas
*Fresh Whipped Cream Topping*
3/4 cup chilled whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Chilled glass or metal mixing bowl
1/3 c. cornstarch
3 c. milk
4 egg yolks
2 T. butter or margarine
1 Tablespoon vanilla extract
2-3 bananas
*Fresh Whipped Cream Topping*
3/4 cup chilled whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Chilled glass or metal mixing bowl
Preparation:
Combine sugar and cornstarch in a heavy saucepan. Stir in milk until blended. Cook over medium heat, stirring frequently, until mixture comes to a boil. Remove from heat. In a small bowl, beat the egg yolks. Add a few spoonfuls of the hot pudding mixture to the eggs. Stir together quickly and return the egg mixture to the hot pudding, stirring quickly to blend all together. Return to the heat and again bring to a boil. Remove from heat and add butter and vanilla. Let stand 5 minutes, stirring occasionally.Slice bananas and scatter in pie shell, pour warm mixture over bananas.
Cover with plastic wrap and refrigerate until cooled.
When pie is completely cooled top with fresh whipped cream and garnish with sliced almonds.
For Whipped Topping: Pour cream in to a glass or metal bowl and beat until soft peaks form gradually add powder sugar until all has been blended and then add vanilla slowly until it has also been blended . Mixture should have stiff peaks. The whipped cream may be put into a pastry bag.
